Happy Halloween - Crock Pot Ribs & Sweet Potatoes

Happy Halloween everyone! Halloween is one of my all-time favorite holidays, and yet it fell on a Monday… my most uninspired day of the week! Seeing everyone be in the holiday spirit at the office today made me really excited to do something, though. Since food is my outlet, naturally a Halloween-inspired dinner was what had to be done!

 

Of course, it is still Monday and my lack of inspiration melted with my lack of time and energy combined with my desire to do something fun means it’s time to use the crock pot (which is so fall, I cannot even stand it!)

 

If you have never made ribs in the crock pot before then I don’t even know what you are doing with your time. It’s quick, easy, and you can totally forget about it and it not be a big deal at all! This recipe is so painless, so simple, so there-is-no-way-you-can-screw-this-up easy so give it a try!

 

 

 

THE RIBS

 

You can do Pork or Beef (any style). Today I bought pork because it was on sale. All you have to do is season them with olive oil, salt, and pepper and put them in the crock pot. You will probably have to cut them in half to fit them all in your crock pot. That is OK!

 

Put the ribs into the crock pot meat side down.

 

Next, rinse 2 medium sweet potatoes well and cut slits into the top. Put the sweet potatoes on top of the ribs.

 

Put the lid on the crock pot and turn it on high for 4-5 hours or low for 8 hours.

The sweet potatoes will be soft and probably oozing goodness while the ribs will be falling off the bone.  

 

 

 

Ingredients:

  • Rack of Ribs

  • 2 Medium Sweet Potatoes

  • Olive Oil

  • Salt & Pepper to taste

Directions:

  1. Season the ribs with olive oil, salt, and pepper. Rub in seasoning well.

  2. Put seasoned ribs in the crock pot, meat side down

  3. Rinse sweet potatoes well and put slits in the top

  4. Put sweet potatoes on top of ribs

  5. Cook on high for 4-5 hours or low for 8 hours

 

I did pair these with these some green beans to get some more color on my plate!

 

 

 

Since it is Halloween, I did cook these 4-ingredient paleo/vegan/AIP pumpkin cookies

Ingredients

  • 5 oz almond butter

  • 1/3 cup pumpkin puree

  • 1 tbsp pure maple syrup

  • ¼ teaspoon pumpkin spice

Directions:

  1. Preheat oven to 350F

  2. Mix ingredients well (works best in a food processor)

  3. Scoop mixture into six, 1 tablespoon sized drops onto a greased baking pan

  4. Cook for 18-20 minutes until the bottoms are crispy.
